The KC-103 is a Santoku of the KC-100 Series. Santoku are all-purpose Japanese knives, and are used in much the same way as a French chef knife.
About the KC-100 Series:
Knives of the KC-100 Series feature the same beautiful Damascus-clad blades as the KC-200 series knives. They have a VG-10 stainless steel core / 33-layer Damascus blade. This provides excellent edge retention to a hardness of HRC 60-62. The basic and simple shaped handles have excellent grip and wear well. Full tang constructions with welded stainless steel bolster for professional use. Proudly made in Seki city, Japan.
