The KC-133 santoku features an SG2 (Super Gold 2) powder steel/SUS410 stainless steel blade and has a black wood handle with stainless steel bolster. Santoku are all-purpose Japanese knives, and are used in much the same way as a French chef knife.
SG2 is a premium Japanese powder steel developed by Takefu Special Steel that creates the razor sharp edge, and can be hardened into a range of HRC 62. It delivers superlative sharpness, wear resistance and has the ability to maintain this very sharp edge. Professional quality, these have of a full-tang construction with welded bolster. Proudly made in Seki city, Japan.
