The KC-147 Kengata features a Takefu Shiro-2 high carbon steel core/SUS410 stainless steel blade and a wood handle with stainless bolster. The kengata is a fabulous Japanese-style chef knife that has some santoku qualities in there as well. The design is perfect for a variety of chopping and mincing.
About the 2000 Series:
Knives of the 2000 series feature hon-warikomi-clad blades made of Takefu Shiro-2 high carbon steel cutting core and san mai SUS410 stainless steel. This composition provides excellent edge retention with a HRC 61 or more.
