The KC-150 is a limited edition Santoku which features a VG-2 / SUS410 stainless steel blade with mahogany wood handle and a stainless steel bolster. Santoku are all-purpose Japanese knives, and are used in much the same way as a French chef knife.
This limited edition was forged of VG-1 high carbon stainless steel cutting core which provides excellent edge-retention to a hardness of HRC 58-59. The beautiful Damascus, "Zen Bokashi"-finished blades are impressive.
