The KC-313 Kengata features a Takefu Shiro-2 high carbon steel core / SUS410 stainless steel blade with wood handle. The kengata is a fabulous Japanese-style chef knife that has some santoku qualities in there as well. The design is perfect for a variety of chopping and mincing.
About the 1000 Series:
Knives of the 1000 series feature Hon-Warikomi-clad blades made of a takefu shiro-2 high carbon steel cutting core, sandwiched between SUS410 stainless steel. This provides excellent edge-retention to HRC 59 or more. The simple O-shaped handle has no bolster. These are very popular in Japanese kitchens.
