The KC-314 Santoku-Sm features a Takefu Shiro-2 High carbon steel core / SUS410 Stainless steel blade with wood handle. Santoku are all-purpose Japanese knives, and are used in much the same way as a French chef knife.
About Kanetsune's 800-Series:
Knives of the 800-Series are a little smaller than the regular Santoku and Nakiri. The simple handles are O-shaped, without a bolster. These are quite sought-after. The Hon-Warikomi-clad blades are made of Takefu Shiro-2 high carbon steel cuttigng core which is sandwiched between SUS410 stainless steel. This provides excellent edge-retention to a hardness of HRC 59 or more.
