The KC-316 Santoku features a Takefu Shiro-2 high carbon steel core / SUS410 stainless steel blade with a black wood handle. Santoku are all-purpose Japanese knives, and are used in much the same way as a French chef knife.
About the 5500 Series:
Knives of the 5500-Series have Hon-Warikomi clad blades made of VG-2 stainless steel cutting core/SUS410 stainless steel. This provides excellent edge-retention to a hardness of HRC 58 or more.
