The KC-735 is a santoku which features a AUS-8 stainless steel blade and a wood handle that has a welded stainless steel bolster. It belongs to the Kanetsune Granshe SX series. Santoku are all-purpose Japanese knives, and are used in much the same way as a French chef knife. Sleek and simple, this santoku features a DSR-1K6 stainless steel blade with wood handle.

The added molybdenum and vanadium give this line a greater rust resistance and hardness, providing excellent edge retention to HRC 57-58.
