The KC-861 Wa-Gyutou features a VG-10 stainless steel (monolayer) blade with dark brown wood handle. The wa-gyutou knife is a Japanese-style chef knife. The style is distinguished by the lightweight octagonal handle and a shift to a heavier tip, which makes quick chopping and mincing through a variety of mediums possible. Use the wa-gyutou for meat, fish, herbs, and vegetables. Proudly made in Seki city, Japan.

The series name "一途 Ichizu" means single-minded, or earnest, in English. The style is understated, leaving room for creativity.

The Japanese traditional octagonal handle "八角柄 Hackaku-e" is made of wood.
