The KC-863 Wa-Santoku features a VG-10 stainless steel (monolayer) blade with dark brown wood handle. Wa-santoku are all-purpose Japanese knives, and are used in much the same way as a French chef knife, only the wa-santoku is capable of more precise slices. Further, the wa-santoku has a more rounded front end. Literally, it means "three-purpose", for the knife is your multipurpose tool for meat, fish and vegetables.

The series name "一途 Ichizu" means single-minded, or earnest, in English. The style is understated, leaving room for creativity.
The Japanese traditional octagonal handle "八角柄 Hackaku-e" is made of wood.
