The KC-123 Santoku features a blue steel #2/SUS410 stainless steel blade and wood handle w/stainless steel bolster. Santoku are all-purpose Japanese knives, and are used in much the same way as a French chef knife.
About the Aogami Series:
The extremely sharp Aogami-2 (blue steel #2) cutting core blades are clad with SUS410 stainless steel on each side, hardened to HRC 61-62. Professional quality, these have of a full-tang construction with welded bolster. Proudly made in Seki city, Japan.
