The KC-145 Santoku is part of the 4500 Series. Santoku are all-purpose Japanese knives, and are used in much the same way as a French chef knife.
About the 4500 Series:
Kives of this series contain Hon-Warikomi clad blades made of VG-2 stainless steel cutting core, which are sandwiched between SUS410 stainless steel. This provides povides excellent edge-retention and a hardness of HRC 58 or more. These have a wood handle with a stainless steel bolster.
