The KC-152 Gyutou belongs to the YS-900 Series. Santoku are all-purpose Japanese knives, and are used in much the same way as a French chef knife.
About the YS-900 Series:
Knives of the YS-900 Series have Hon-Warikomi clad-blades, which have an extremely sharp Swedish sandvik 19C27 stainless steel cutting core that contains a high percentage of carbon. After heat treatment the steel is possesses a very high hardness, HRS 60-61 level and good wear resistance. Sub-zero treatment further improves their wear resistance. These have excellent edge retention HRC 60-61. The handles are a beautiful ly-finished black wood with excellent grip and stand the test of constant use. These have half-tang construction with a stainless steel bolster. Proudly made in Seki, Japan.
