The KC-462 Santoku features a high-carbon blue steel #2 core w/11-layer Damascus blade and a red sandalwood handle. Santoku are all-purpose Japanese knives, and are used in much the same way as a French chef knife.
About the Zen-Bokashi Damascus Blade series:
Knives of this series are made of blue steel #2 high-carbon steel cutting core, which provides excellent edge retention, to a hardness of HRC 61-62. The beautiful Damascus "Zen-Bokashi"-finished blade is make by traditional craftsmen in Echizen-city. These are fitted with Japanese traditional D-shaped, red sandalwood handles and have a comfortable feel in the hand.
