The KC-589 features a AUS-8 stainless steel core / SUS405 stainless steel blade with magnolia wood handle and black plastic bolster. The Japanese kai-saki knife is excellent for us in shellfish, which is its original use. But it has also been used for the preparation of garnishes.

These are high-grade Japanese-style kitchen knives for professional use. The cutting edge core is made of AUS-8 stainless steel, which has been forged and welded with a stainless steel. The handles are magnolia wood with a black plastic bolster.
